During the fall and spring semesters, students enrolled in Hotel and Resort Management and Restaurant and Food Service Management programs operate a Lunch Restaurant. Students develop the menu and test recipes prior to opening for the public. Each student participates in all positions within the restaurant during the semester – host, serving staff, line cook, salad chef, and expediter. The Signatures by Daylight Restaurant is open on select Tuesdays and Thursdays from 10:30am-1:00pm.
Friday evenings features Signatures by Candlelight. This learning laboratory is operated by the Culinary Arts students and offers fine dining. Students rotate through all the positions of a restaurant including garde manger chef, line cook, pastry chef, expediter and serving staff. Development and presentation of unique recipes for both American and Classical dining presentations is the hallmark of this student dining experience. Each Friday, six-course tasting menus are offered with either an American Regional, Classical French, or Global influence. Wine is available from our wine list for additional purchase.

Reservations are required and may be made by calling 607-746-4351 Monday through Thursday from 9am-4pm. Seatings are available from 5:30pm-7:00pm. The restaurant is located on the second floor of the Alumni Hall Hospitality Center. We look forward to welcoming you into our classroom!
