Culinary team with Caribbean Inspired award winning chili

Hundreds of local community members turned out on a bright Sunday afternoon for an area Superbowl tradition. Now in its 15th year, the Chili Bowl cook-off is the singular fundraiser hosted annually by the Community Arts Network of Oneonta at the Wilbur Mansion on Ford Avenue…Longtime dominators of the competition, students from SUNY Delhi’s culinary arts team, took the top spot in every category, including the competition’s newest, “best non-traditional recipe,” for their Caribbean chili.

SUNY Culinary team at chili cookoff

Team captain Carly Yezzo described the winning chili as a base of short ribs, chorizo and brisket, cooked in with a blend of plantains, ginger and garlic and seasoned with cilantro and lime.

The students savor the opportunity to flex their creative culinary abilities, meeting weeks in advance to develop a flavor profile and design a recipe, said team coach Brianne Slocum.
